You can take care of aggro threats with board wipes like Crippling Fear, or counter early- and late-game spells with cards like Counterspell

Now the only way an opponent could evade infect damage would be to always have a chunk blocker ready, exile Plague Myr, or enchant it with a Pacifism-type aura to prevent it from attacking and blocking

The nice thing with Maze of Ith is that you can use it to untap your own creatures, like those with an attack trigger, so you can get whatever activation you want and keep your creature out of harms way
